Abstract

The article studies method of plot adaptation from classical Chinese novels to Vietnamese Cai luong theater, specifically: changing of circumstances to change the plot, blurring the political plot, restructuring the work to create a new plot, etc. This article shows the important role of plot creation in adaptation from classical Chinese novels to Vietnamese Cai luong theater. Moreover, it gives readers a new understanding of the issue of receiving classical Chinese novels in Vietnam from the perspective of academic adaptation as well as affirming the unique creations of our nation in the acquisition of quintessence of human culture.

Factors affecting domestic tourist satisfaction on ecotourism service quality in Ca Mau Province, Vietnam

Abstract

The goal of this study is to discover the factors influencing domestic tourists’ satisfaction with the quality of ecotourism services. Survey data collected from 257 visitors visiting Ca Mau Province were analyzed to provide evidence. Results from multiple regression analysis using SPSS software showed that food, beverage, shopping, and entertainment services, perceived price, travel landscape, security and safety, transportation had positive associations with domestic travelers’ satisfaction. Besides, this research also indicated that female tourists tended to be more satisfied than male tourists. The main findings of this study provided practical implications for travel agencies and tourism managers to maintain and enhance domestic tourist satisfaction with the quality of ecotourism services in Ca Mau Province.

Optimization of air drying condition for Crocodile (Crocodylinae) jerky

Abstract

Jerky products from crocodile meat has been studied at the Faculty of Food Science and Technology, Nong Lam University, HCM City. With the process of processing technology developed by the research team, the crocodile jerky product has suitable moisture content at 18%, the good color value, the water activity and appropriate cutting force for the best sensory value according to defined quality. However, in order to achieve the high quality and stability of the products, the team used Response Surface Methodology using Box- Behnken design (BBD) with 3 independent variables: including temperature, layer thickness of material and air speed. The appropriate range of those variables was determined previously in experimental. The result indicated that the optimal air drying conditions for the jerky product were temperature of 6000C, the material thickness of 2.5 mm, and the air speed of 1m/s for 4 hours 30 min. The Crocodile jerky product has golden brown color, smooth surface and uniform structure. The optimal Products was vacuum packed and monitored for the storage process. After 4 months, the product has a peroxide index of 0.75 ± 0.03 meq/kg, maintained its natural flavor and the microbiological quality of the product, which is satisfied according to the regulations of TCVN 7049 - 2002.

Study on wax separation in rice bran before oil extraction in the production process of neutralized rice bran oil

Abstract

In rice bran, fat content estimated 15%, contains bioactive compounds, typically Oryzanol. The rice bran oil produced by chemical refinering. However, due to wax content in the bran, it can reached 30% w/w. Therefore, the refinering often using heavy chemicals, in long time and high temperatures. This makes lossing of Oryzanol content in oil, therefore bran oil has an Oryzanol content only about 5000 ppm. The research of rice bran oil extraction and chemical refining of crude oil to neutralization, removal wax from rice brand before oil extraction. The main purpose of researchs is to obtain neutral oil with stability chemical indicators while increasing Oryzanol content which is the main antioxidant characteristics of rice bran oil. The conclusions of rice bran oil neutralization IV is 92.6 g iodine/ 100g, PV is 22.9 meq/ kg, FFA is 24.4 % and Oryzanol concentrations are reached 12,763 ppm, while not detecting trans fat in rice bran oil neutralization.

Abstract

Population aging is a global phenomenon that takes place in both developed and developing countries at different rates which is one of the most significant social change phenomena of the 21st century. Population aging is becoming one of the topics of concern not only in Vietnam but around the world. Using secondary data of international and Vietnamese agencies and organizations, the article focuses on analyzing and clarifying the aging trend in the world and in Vietnam through fluctuations in fertility, life expectancy, aging number, median age and potential support ratio. The study also pointed out some characteristics of the aging population in Vietnam such as: rapid aging rate, differs by region, rural aging is high and skewed towards women, the proportion of elderly people who continue to work is quite high and the number of years of healthy life is still low ect .. These give rise to a number of socio-economic problems, thereby proposing orientations to cope with the aging problem.

Abstract

In recent years, the jujube (Ziziphus mauritiana) fruit cultivation has been developing in Ninh Thuan province. The issue on technical efficiency (TE) is considered by both the producers (famer) and the local policy makers. Two methods of Ordinary Least Square estimation (OLS) and Maximum Likelihood Estimation (MLE) were applied in the study in order to estimate TE of jujube cultivation and effects of input factors to production. The survey is conducted in Ninh Phuoc district, Ninh Thuan province with convering on 240 farmers who cultivated jujube crop. The results show that the average technical efficiency of observations was 67.74% and the input variables are significant in the model. Specially, ogranic fertilizer, inogranic fertilizer, pesticide and labor affected on jujube production with coefficient 0.041***; 0.021***; 0.045*** and 0.023**. In addition, significant determinants that positively related to technical efficiency were education, age, labor, scale, extension and cultivation methods. Besides, the study results also show that factors of education level, age, agricultural extension, and farming practices affect the technical efficiency of jujube farmers. This records that the technical efficiency of farmers can increase if they apply the correct and sufficient cultivation techniques.

Abstract

Symbolic poetry school originated in France and was associated with the prominent poets such as Baudelaire, Verlaine, Rimbaud, Mallarmé, Valéry, Apollinaire, etc. Through theory and the reality of composing, symbolic poetry has set foundation for a new era of human beings’ poetry. However, symbolic poetry has undergone challenging ways of creation to achieve those success. It is the type of characters who have a will, ambition and energy to conquer society, reach success in terms of money, fame, education, and against his own inferiority.
