Abstract

The compliance of pesticide using principle is a vital variable in vegetable production because of its relation to food safety, human health, environment and economic efficiency. The research used the partial least squares structural equation modeling (PLS-SEM) with SmartPLS software of a sample 371 farmers to estimate farmers’ compliance of pesticide using principle in vegetable production in Lam Dong province. Results indicated that the influence of some factors on the farmers’ compliance toward using pesticide of 43.7 percent; and this compliance has depended on some factors including the “Right ingredient” (0.301***), “Right time” (0.173***) and “Safety” (0.252***). Additionally, the effective pesticide using was explained by compliance of pesticide using principle, safety and household education level.

Abstract | PDF (1.2M)

Abstract

The condensed products from tomatoes in foreign countries have rapidly developed, however, dried tomato sauce in piece used together in hamburger and pizza etc. Which is very convenience and creates a delicious feeling for users has not available on the market yet. For the process of processing dried tomato sauce in pieces with the structure, color and sensory criteria of the product to meet consumer demands, the substances making structure of pectin, carboxymethiylcellulose (CMC), xanthan gum, denatured starch are determined by different ratios, structural measurement, product color measurement and sensory evaluation method. The results show that the product using denatured starch has the softest structure compared to the remaining substances. The color of the product after 14 days of being stimulated under light conditions at 40  1oC shows that the color indexof the product decreases over the stimulating period, in which the sample using Pectin can keep product color better than the rest. And sensory evalation by comparison method with result sample using denatured starch has reasonable soft as well as evaluated color and sensory indicators. Therefore, selecting supplementary denatured starch samples (1%) is for the process of processing dried tomato sauce in pieces.

Abstract | PDF (1.5M)

Abstract

The research aimed to determine the most suitable conditions of homogenization, the concentration of emulsifier sucrose ester and stabilizer CMC, and sterilization conditions for high stability of coconut milk emulsion. The emulsion was homogenized at different high speeds (0, 8000, 9000, 10000, 11000 and 12000 rpm) and times (1, 3, 5 and 7minutes). Different concentrations of sucrose ester (0, 0.05, 0.1, 0.15 and 0.2%) and CMC (0, 0.4, 0.6, 0.8 and 1%) were studied to stabilize the emulsion. The sterilization conditions for canned coconut milk were also calculated in order to achieve the commercial sterility. The results indicated that the high stability of coconut milk in terms of separation index, particle size mean and particle distribution was obtained as homogenized at the speed of 10000 rpm for 3 minutes. The concentration of sucrose ester (0.15%) and CMC (1%) was found to be the most suitable for the emulsion stabilization. Sterilization at 121oC for 31 minutes was validated and confirmed for the high stability of canned coconut milk in terms of micro-organism and peroxide value. The resultant product had high whiteness index and sensorial characteristics.

According to Glotfelty, the first and the simplest ecocriticism is the study of the relationship between literature and natural environment. The ecocriticism proposes the theory of “natural centralism”, but disagrees with the notion of “human center”. From the perspective of ecocriticism in Binh Nguyen Loc's short stories, nature is the mainstream and the center of the picture of life. In which, people live in harmony with nature. Through his short stories, the transformation of natural ecology, and the change in the relationship between man and nature is seen. Since then, disagreement with the destruction of the nature during the exploitation is stated.
